1. Baked vegetables in white sauce: An assortment of baked vegetables in white sauce is the perfect way to start your day on a flavourful note. Melt 100 gm butter for 1 minute on low heat and add 200 gm all-purpose flour (maida). Add 1l milk gradually. For a lump-free white sauce, use a hand blender to mix all the ingredients. At the end, add salt, pepper, and nutmeg. You can also add grated cheese. The best thing about this recipe is that you can use a variety of vegetables like cauliflower, carrots, beans, and mushroom. Boil cauliflower, carrots, beans for 3 to 4 minutes. Saute chopped onion with ginger-garlic paste and then add all the boiled vegetables. Season them with salt, pepper and oregano. Pour all the vegetables in a baking dish with one cup of white sauce. Mix them well and garnish it with some grated cheese. Bake it for 10-15 minutes. Enjoy it with garlic bread!
2. Pav bhaji: This delicious blend of vegetables cooked in butter and powdered spices is delicious as well as filling. Take cauliflower, potato, beans, carrots, green peas, and any other vegetable you prefer in a pressure cooker. Add 2 cups of water and cook it until there are three to four whistles. Strain the extra water and mash all the vegetables using a hand blender. Now, in a pan, take 3 tablespoons of butter and saute chopped onions with ginger and garlic paste. Add tomatoes. Cook until everything is mushy. Add the mashed vegetables. Add 1 tsp chilli powder, ¼ tsp turmeric, ½ tsp cumin powder, salt to taste and 1 tsp pav bhaji masala. Cook it for 5 to 7 minutes. You can add a little water if it’s too thick. Garnish with coriander leaves and oodles of butter. Enjoy it with pav bread!
3. Banana pancakes: Fluffy banana pancakes are the ultimate lazy weekend brunch. Without doing much, you can make this filling and sumptuous brunch item. Mash 2 to 3 ripe bananas using an immersion blender. Use a hand blender with a whisker to beat 3 eggs. Pour all the ingredients in a bowl and add 1 and a half cups of all-purpose flour (maida) 1 tsp baking powder, sugar (optional), and a pinch of salt. You can also use whole wheat flour for a healthier version. Mix all the ingredients with a hand blender. On a skillet, brush oil or unsalted butter, pour 1/4 cup of the batter onto it. Cook for 1 to 2 minutes and flip and cook. Serve it warm with sliced bananas, strawberries and dry fruits. And, of course, drizzle maple syrup.
