Recipe 1: Mexican veg toast:
Ingredients
- 2 slices of bread
- 1 tbsp chopped capsicum
- 1 tbsp chopped onion
- 2 tbsp chopped tomatoes
- 1 tbsp melted butter
- 2 cloves crushed garlic
- Salt
- Grated processed cheese
How to prepare it?
In a bowl, mix melted butter and crushed garlic. Apply this mixture to one side of each bread slice. In another bowl, mix chopped capsicum, onion, tomatoes and salt to taste. Apply the mix on both slices of bread. Put a generous amount of grated cheese. Place the bread slices on the grill plate. Adjust the microwave oven to grill mode. Cook it for 4 to 5 minutes or until the cheese melts. Before serving sprinkle chilli flakes and oregano for extra flavour.
Recipe 2: Bread upma:
Ingredients
- 5 to 6 slices of bread
- 1 finely chopped onion
- 1 tsp ginger and garlic paste
- 1/2 tsp mustard seeds
- 1/2 tsp chana dal
- 1/4 tsp Hing (asafoetida)
- 1/4 tsp turmeric powder
- Curry leaves
- Oil
- Salt to taste.
How to prepare it?
In a microwave-safe bowl, heat oil for 2 minutes on high. Add the mustard seeds, chana dal and asafoetida to the oil and cook in the oven for 2 minutes or until the dal turns golden brown. Now add the chopped onions, ginger-garlic paste, curry leaves and cook everything again on high for 2 minutes. Add turmeric powder. Then add the bread chunks, toss everything gently. Cook again for 2 minutes on high (stir in between).
Recipe 3: Microwaved Steel Cut Oats
Ingredients:
- ½ cup steel cut oats
- 2 cups water
- 1 tsp jaggery or sugar
- 1 thinly sliced banana
- 2 to 3 strawberries
How to prepare it?
In a large microwave-safe bowl mix oats and water. Make sure that the bowl is deep enough otherwise the water will overflow. Cook the oats for 5 minutes on high in the microwave. Take the bowl out and stir the oats well. Add jaggery or sugar and microwave for another 5 minutes or until the oats are cooked. Serve it with sliced bananas and strawberries.
