STEP 1: Chutney recipes are very common in Indian households for various reasons. One such healthy, tasty accompaniment is the palak chutney that is made with fresh spinach leaves. Start off by gathering fresh ingredients. Take a bunch of spinach leaves, put them in a bowl, and wash them properly. Make sure to remove all the damaged parts, including roots. Wash the leaves 2-3 times to make sure that they are thoroughly clean.
STEP 2: Now in a medium pan or kadai, heat three to four tsp oil and sauté one tsp chana dal, half tsp cumin, and one tsp urad dal. Add one piece of ginger, three chillies, and sauté till blisters emerge on the chillies’ skin. If you want your chutney spicier, then you can add more chillies.
STEP 3: Keep the flame low, add the spinach leaves, and sauté well till the leaves shrink and turn dark. Transfer the mixture (once it cools off) to a mixer grinder.
STEP 4: Run the mixer until smooth. Then add half cup coconut, half tsp salt, a small piece of tamarind, and half cup water, then run teh mixer again.
STEP 5: Now in a pan add two tsp oil, few curry leaves, half tsp mustard, one dried red chilli, half tsp urad dal, and allow them to splatter. Transfer the palak chutney into the mixture and mix well.
STEP 6: Your palak chutney is ready to be served. When stored in a refrigerator, you can use it for two to three days.
