
How To Make Indian Masalas At Home
Over here we discuss a few basic masalas that add flavour to different Indian curries. To make these masalas at home – all you need is a good mixer and grinder for masalas (and of course the ingredients!). Creating these masalas at home beforehand will not only improve the flavours in your food but will also help you cook many Indian recipes faster.
1. Garam masala – Place a kadhai over medium heat and add ½ cup coriander seeds, ¼ cup cumin seeds, 1 teaspoon whole cloves, 1 tablespoon green cardamoms, ½ teaspoon black peppercorns, 3 cinnamon sticks, 4 medium bay leaves, and 1 teaspoon fennel seeds. Roast them until they’re fragrant but not browned. Transfer the spices to a plate. Let them cool. Once cool, add the spices in a grinder. Grind until the spices are finely powdered. Store the garam masala in an airtight container.
2. Goda masala – Roast 2 cups coriander seeds and ½ cup dry coconut without oil. Keep it aside. Roast ½ cup coriander seeds, ¼ cup cumin seeds, 2 teaspoons black peppercorns, 3 cloves, 3 cinnamon sticks, 2 or 3 dried red chillies, 1 tsp hing, 1 tsp turmeric powder in very little oil. Add salt to taste. Once all the spices are cool, place them in a grinder. Grind until the spices are finely powdered. Store the masala in an airtight container.
3. Onion and tomato masala – In a kadhai heat the oil. Then add onions in the kadhai. Stir the onions continually. Once the onions are brown add ginger and garlic paste. Cook for another 2-3 minutes. Then add the tomatoes. And salt to taste. Cook until the tomatoes are done. Keep the masala aside to cool down. Once cool, put the masala in your mixer grinder. Blend until you get a fine paste
4. Ginger and garlic paste – Many Indian recipes start with adding ginger and garlic paste to kadhai. Having your own ginger garlic paste is a healthier option than buying the pastes that you get from the market. Making ginger and garlic paste at home is very simple. Add a bit of water in your mixer jar. Then add garlic and ginger. Process until the mixture is smooth. Store in the refrigerator in an airtight container.
