Recipe 1: Paneer Kathi rolls:
Ingredients:
- 3 or 4 chapatis or paranthas
- 250 gm paneer cubes
- Sliced mixed bell peppers
- One medium-sized onion, thinly sliced
- Green chutney
- Ketchup
Marinade ingredients
- 1/2 cup curd
- Red chilli powder
- Ginger-garlic paste
- Garam masala
- Turmeric
- Kasturi methi
- Salt as per taste
How to prepare it?
Mix all the marinade ingredients in a bowl. Add paneer and mix well. Let the marinated paneer cubes sit for half an hour at least. In the non-stick frypan, heat 1 tbsp of oil. Saute onions, bell peppers and sprinkle a pinch of salt and cook for 3 to 4 minutes. Add marinated paneer and mix well. Turn the heat off and add finely chopped coriander leaves. Heat the chapatis or paranthas. Spread green chutney on one side and add the paneer fillings. Add some ketchup. Fold it and serve it hot.
Recipe 2: Savoury crepes:
Ingredients:
- 1 cup maida
- 2 large eggs
- 1 ½ cups milk
- Salt
- 2 tbsp butter
- ½ onion, sliced
- 2 crushed garlic cloves
- 1 cup spinach
- Grated cheese
How to prepare it?
In a bowl, mix the flour, eggs, milk and salt. Mix until smooth. Make sure the batter is thin. Heat the non-stick frypan. Add the butter and onions to the pan. Cook until light brown. Then add garlic, spinach and salt. Once cooked, keep it aside. Brush the same pan with melted butter and pour the batter to make a crepe. Cook both sides. Then place the spinach mixture and add grated cheese. Fold the crepe and serve it hot.
Recipe 3: Uttapam:
Ingredients:
- 2 cups uttapam batter (same as idli batter)
- 1 medium onion (chopped)
- 1 tomato (chopped)
- Finely chopped coriander leaves
- Salt to taste
- Crushed black pepper
- Idli podi
How to prepare it?
In a bowl, mix the batter, chopped onions and tomatoes. Add salt as per taste and mix everything well. Now, on a non-stick frypan, heat oil. Pour the idli batter. Spread the batter gently. Sprinkle coriander leaves and crushed black pepper. Once the base is firm, flip it and cook the other side. Sprinkle idli podi before serving. Serve it hot with coconut or tomato chutney.
