Mixer grinder recipes: Comfort food to make your day better

Many Indians are indulging in comfort food as coronavirus pandemic keeps them cooped up inside their homes. If you are searching for some comfort food recipes that you can prepare using a mixer grinder, look no further as here are some dishes that will soothe your soul:  

• Banana pancakes: The best thing about banana pancakes is that it is high on protein and also scores high on taste. In a mixer grinder jar, take 1 cup yogurt, 3 eggs and 2 ripe bananas. Blend them together. In another bowl, mix the flour, baking soda, and a pinch of salt. Mix the flour to the banana mixture using a spatula. Heat a pan and coat with cooking butter. Then place the batter in large spoonfuls. Cook both sides until they are light brown. Serve them with some sliced bananas. Drizzle chocolate syrup and honey on top.

• Tomato basil soup: On a pan, heat 2 tablespoons of oil and saute chopped onion and minced garlic cloves. Once they are soft, add 3 to 4 chopped tomatoes. Cook until soft. Add one teaspoon of salt and 5 to 7 basil leaves. Now, in a mixer grinder, purée the soup. Season with salt and pepper. Garnish it with torn basil leaves and more black pepper. Serve it hot with breadsticks. 

• Pav bhaji: In a pressure cooker, take diced potatoes, chopped vegetables like french beans, carrots, cauliflower, and peas. Now, pour the required amount of water and cook it for 1 or 2 whistles. Now, drain excess water and blend the vegetables in a mixer grinder. Now, in a pan, heat cooking butter and add the cumin seeds. Let the seeds splutter. Now saute chopped onions and minced garlic cloves. Add 1 teaspoon ginger garlic paste. Put chopped tomatoes and cook them until they are soft. Now, add the blended vegetables. Add 1 teaspoon coriander powder, a pinch of turmeric, 1 teaspoon garam masala, and 1/4th teaspoon red chili powder. Add salt as per taste. Cook for 10 minutes. Add water if necessary. Now, add dollops of butter and serve it hot with buns.
