
Easy chutney recipes (for dosa/idli) to make using mixer grinder
It would not be wrong to say that breakfast items like dosa and idli are incomplete without chutneys. Though placed on the margins of the plate, it is the chutneys that give your dosas and idlis a burst of flavours. We are sharing with you some easy chutney recipes that you can make at home with a mixer grinder.
1. Classic coconut chutney: One cannot imagine eating idlis, dosas and vadas without the classic coconut chutney. In a mixer grinder, add coconut, green chillies, ginger, salt and water. Blend all the ingredients together until the paste is smooth. Transfer this chutney to a bowl. For tempering in a small pan, heat oil. Add mustard seeds and let it splutter. Now, add asafoetida, dry red chillies, curry leaves, and urad dal. Switch off the gas, when the dal changes its colour. Now, pour this tempering into the bowl of chutney, stir well and your coconut chutney is ready.
2. Tangy tomato chutney: Prepared with ripened tomatoes, this tangy chutney goes well with a variety of dishes. Heat oil in a pan. Once the oil is hot, add two whole dry chillies, urad dal, chana dal and chopped onion. Sautee for a few minutes. Add garlic and 2 to 3 tomatoes. Once oil starts to separate add turmeric and salt. If you want your chutney to be really spicy, add red chilli powder. Switch off the gas once the tomatoes are soft. Once this mixture cools down, blend it in a mixer grinder. Pour the chutney paste into a bowl. For tempering, heat oil. Let the mustard seeds splutter. Add asafoetida and curry leaves. Now, mix this tempering with the chutney. You can also serve this chutney with steamed rice.
3. Peanut chutney: If you are in for a healthy chutney, this recipe is for you. Roast peanuts and keep them aside. In a pan, heat oil and saute cumin seeds, red chillies, chopped onions and garlic. Cook until the onions turn light brown. Let all the ingredients cool down. Then put all the ingredients, including the roasted peanuts, in a mixer grinder and blend until it is smooth. Add salt to taste. For tempering heat oil, add curry leaves, red chillies, asafoetida and saute for a few seconds.
