Mixer grinder recipe: chole masala
Here is a step-by-step guide that will help you make chole masala using a mixer grinder:
Step 1: Take a non-stick pan, keep it on a low to medium flame, and add dry Kashmiri red chillies to it. Before adding, remove all the stems of the chillies and cut them half horizontally.
Step 2: Then add bay leaves, black cardamom and cinnamon sticks. Don’t increase the flame – keep it on a low to medium flame and dry roast the ingredients for around 4-5 minutes till they change colour and emit a wonderful aroma. Transfer the spices to a plate and let them cool completely.
Step 3: In the same pan, now add caraway seeds, cumin seeds, coriander seeds, carom seeds, fennel seeds, black peppercorns, pomegranate seeds and cloves. Again, dry roast these ingredients on a low to medium flame for 2-3 minutes till they change colour. Transfer to a plate and keep them aside to cool completely.
Step 4: Pour the dry roasted ingredients in a grinder and grind them until smooth.
Step 5: Pour the mixture in a bowl and add crushed nutmeg, mace powder, dried powder, black salt, salt, and asafoetida. You can again mix all the ingredients for 1-2 minutes in a grinder or simply with the help of your fingertips.
Step 6: Let your homemade chole masala powder cool completely ( if you are using a mixer grinder). Once it cools off completely, pour the masala in a clean airtight container. Store it in a cool, dry place, and use it when required.
