A rice cooker is a versatile appliance that can be used for making a wide array of recipes – from idlis to one-pot dishes. 1. Idlis: Soft, fluffy and delectable idli-chutney make for perfect breakfast. With an electric rice cooker, you can quickly make a single batch of idlis at one go. In the inner pot of the electric cooker, add water and heat it until it boils. While the water is heating, grease the idli moulds with oil or ghee. Pour a ladle full of batter into each mould. Do not fill the moulds up to the brim. Place the idli stand in the electric rice cooker and adjust the settings to ‘cook’ function and lock the lid in position. In 10 to 15 minutes, your idlis should be ready. Insert a toothpick into the idlis to see if they are cooked properly. If not, then you can keep them in the electric rice cooker for another 2 to 3 minutes. Serve the hot idlis with coconut chutney.
2. Quinoa pulao: This is a wholesome dish that makes an amazing lunch meal or dinner. Rinse quinoa well. When not rinsed well, cooked quinoa may taste a bit bitter. Now, adjust the electric rice cooker to the cook mode. Pour 2 tsp of oil in the inner pot and add whole spices like bay leaf, cumin seeds, cloves, cardamom and star anise. When they begin to sizzle, add chopped onions and ginger-garlic paste. Saute for 30 seconds. Add chopped carrots and beans. Press the stop button and add water ½ tsp salt and quinoa. For every one cup of quinoa, add 2 cups of water. Taste the water and add more salt, if required. Mix everything well and then lock the lid in its position. Start the cook function. Relish a hot plate of quinoa pulao with raita.
3. Steamed vegetables: This is one of the easiest and quickest ways to enjoy vegetables. Cut broccoli, carrots, mushrooms and cauliflower in big chunks. Wash them properly. Place them in a steamer basket. Pour some water into the inner pot and place the steamer basket. Start the cook function and let the vegetables steam for 5 minutes to 7 minutes. Before serving, toss them in little butter and season with salt and pepper. You can also add oregano and chilli flakes if you like. Serve with a cheesy dip.
