1 cup Coriander leaves
1 cup roasted peanuts
1 tbsp yoghurt

How to make the chutney using a hand blender?
In a small pan, heat 1 tbsp oil and add mustard seeds, cumin seeds and curry leaves and let them crackle for a few seconds. Let them cool. Then, pour the tempering in a beaker and add coriander leaves, roasted peanuts, green chilli, salt and tamarind paste and blend well to make a smooth paste. Add water if the chutney is too thick. You can also use lemon juice instead of tamarind paste. Before serving this chutney, add the second tempering. Heat 1 tbsp oil in a pan, add mustard seeds, curry leaves and dry red chillies and let them crackle for a few seconds. Pour the tempering over the chutney before serving it.
2. Mint sauce: Sweet, tangy and fresh, mint sauce is really simple to prepare. It makes a great accompaniment for Indian snacks like samosas and pakoras and goes equally well with quiche and frittata.

- 2 tbsp sugar
- 1 tbsp coriander seeds, coarsely crushed
- Finely chopped cilantro
How to prepare it using a hand blender?
In a pan bring one cup of water to boil and add the mint leaves and cook for 3 to 4 minutes. Strain the water and put the mint leaves in a bowl. Add sugar, cilantro and coriander seeds to the bowl. Using a hand blender, blend all the ingredients. Add 2 to 3 tbsp of water to blend and make a thick smooth sauce.
3. Mint yoghurt sauce: This is a delicious sauce that you can serve as a dip with various appetisers.

How to make the sauce using a hand blender
Using a hand blender, grind mint leaves, coriander leaves, green chilli and ginger. To make a smooth paste, add 2 to 3 tablespoons of water. Then add yoghurt and mix well. Add salt to taste. Serve in a small bowl and garnish it 2 to 3 mint leaves.

3 cups fresh coriander leaves
1 chopped raw mango
1 small piece of ginger
1 green chilli
Salt or to taste
1 tsp roasted cumin powder

Wash and roughly chop the coriander leaves. Put them in a beaker and add the raw mango, ginger, green chilli and roasted cumin powder. Add a few tablespoons of water and blend until smooth.
